Broccoli Chicken Cheddar Rice Bake

Broccoli chicken cheddar rice bake is one of those effortless and tasty meals that will make any family happy dinner a smash hit. With a few store-bought ingredients and seasonings it will make for a quick dinner option.

On a Sunday evening, this was exactly what I was looking for while trying to prepare for my work week. This recipe from start to finish took about 30 mins and will not let you down. Let’s get started!

Broccoli Chicken Cheddar Rice Bake

Nutrition per portion

Ingredients
  • 4 Cubed Chicken Breast
  • 1 Sliced Half Onion
  • 2 Cups Of Broccoli Florets
  • 1 Cup of Milk
  • 1 Can of Cheddar Sauce (Campbells)
  • 1 Can of Fiesta Cheese Sauce (Campbells)
  • 1 Cup of Cheddar Cheese
  • 2 Cups of Rice
  • 4 Cups of Broth
  • 1 Tbsp of Butter
  • 1 Cup of Panko Bread Crumbs
  • 2 Chopped Green Onions
  • 1 Tsp of Canola Oil
  • 2 Tsp of Complete Seasoning
  • 2 Tsp of Pepper or taste
  • 1 Tsp of Season Salt or taste
  • 2 Tsp of Garlic Powder
  • 1 Tbsp of Olive
Method
Preheat oven to 350F

Prep: In a large bowl, add the cubed chicken, onions, season salt, garlic powder, and complete seasoning. Mix the seasonings and chicken well. Set the chicken aside in the fridge for 15 minutes.

Cheddar Sauce: In a medium bowl pour both cans of cheddar sauce and milk. Whisk the ingredients until well combined. Then set aside.

Topping: In a medium bowl add panko bread crumbs, scallions, 1 tsp of garlic powder, and melted butter. Mix well and set aside.

Cook: In a large saucepan add chicken broth and rice. Cook rice as instructed and then let stand for 10 minutes.

Add oil to a large skillet and place cubed chicken inside. Cook chicken for about 3-5 minutes. Then remove from the skillet and set aside.
Bake: Add rice, broccoli, and chicken to a large baking dish. Mix until well combined. Then add cheese sauce until the mixture is well coated. Top the casserole with the shredded cheddar cheese. Lastly, wrap with foil and cook in the oven 20 minutes.

After 20 minutes remove from oven and top the casserole with the panko bread crumb topping. Put back in the oven for 15 minutes uncovered. Once the 15 minutes is up, allow standing for 10 minutes to cool. Then serve.      

Quick Ramen Soup

I know it has been a long time but I thought I would share this quick ramen recipe! I was totally craving some asian delights in a bowl with extreme flavor and I did not want to buy it. I knew I could make ramen that was restaurant quality in my own home. I am not talking about doctoring your own pack of noodles. I am talking about flavorful broth made with vegetables and minimal ingredients.

What you will need:

2 Bone Broth (Chicken)

1 inch of Ginger cut in chunks

4 cloves of Garlic

4 Cut Stalks of Green Onions

1 Tsp of Fish Sauce

1 Tbsp of Maggi flavoring

2 Cups of Water

2 Boiled Chicken Breast Boiled

1 Package of  Raw Thinly Sliced Beef

Pound of Large Stemmed Shrimp

1 Box of Ramen Noodles

4 Halved Hard Boiled Eggs

1 Chopped Green Onion

1 Bag of Shredded Carrots

1 Pint of Brown Thinly Sliced Mushrooms

1 Package of Bean Sprouts

The Broth:

In a large stock pot add bone broth, ginger, garlic, and green onions. Allow to simmer slowly for 15 minutes. Then add fish sauce, Maggi flavoring, and 2 cups of water. Allow the broth to continue to simmer for 20 minutes on low. After 20 minutes,discard the ginger, garlic, and green onion from the broth.

Noodles:

While the broth is simmering cook noodles as directed on the box. I always stop cooking them 1 minute shorter than instructed for that classic ramen texture. After cooking shock them in cold water to stop the cooking.

Build the Bowl:

Place the noodles in the bottom of the bowl. Then add mushrooms, carrots, bean sprouts, chicken, shrimp, and beef. Add these items in the corners of the bowl to make sure you can see the contents. Then ladle the hot broth on top. Fill the bowl to the top to cover the contents. Then place the halved egg and green onions on top. You can add some of your favorite condiments like siracha or hoison to give the broth a little extra flavor.

However, you should taste the broth before adding the hot sauce to really get that FLAVOR!

J. Delawcious Seafood Boil

Seafood Boil Time!

J. Delawcious Seafood Boil is a nice way to cut cost on a seafood dinner for the family. My J. Delawcious Seafood Boil can comfortably feed 5 people. Joe’s Crab Shack charges about 60 dollars total for two people to eat a steam pot. So why pay more?  I am going to show you how to get the same experience and save a little money. Let me break down what I spent for this meal. I spent 6.99 for one bag of shrimp. $6 for lobster, $20 for snow crab, 5 for the sausages and I already had potatoes/corn. $37.99 to feed four people. Which was a total of $9.50 a person.

Joe’s Steam Pot recipe called the Arctic Bay for one person has snow crab, shrimp, a whole Maine lobster and smoked sausage cooked in garlic butter and topped with Old Bay Seasoning cost $31.49! Why pay more?

So let’s get started on this J. Delawcious Boil.

What you will need:

  • 2 Pounds of Peeled and Deveined Large Shrimp
  • 2 Lobsters
  • 3 Chopped Hot Chicken Sausage
  • 4 Halved Snow Crab Legs
  • 4 Chopped Red Potatoes
  • 5 Ears of Corn on the Cob
  • 2 Chopped Medium Onions
  • 3 Lemons Sliced
  • 1 Half Bottle of J. Delawcious Seasoning
  • 2 Bay Leaves
  • 2 Tbsp of Old Bay
  • 3 Cups Water


Cook:

In a large pot add water, bay leaves, lemons, and J. Delawcious seasoning. Allow the broth to simmer for 15 minutes. Then add potatoes. Allow potatoes to cook for 5-8 minutes. After 8 minutes, add the chicken sausage and corn.

Stir and allow to simmer for 5 minutes. Add lobster. Allow to simmer for 6 minutes. Make sure the lobster shell is submerged in the broth. After 6 minutes, remove lobster and sit aside. Add crab legs and steam in broth for 5 minutes. Remove crabs from broth after five minutes and sit aside. Then add the shrimp to the broth and cook for five minutes.

Garnish with parsley and plate in a tin steam pot with extra lemons.


Dipping Sauce:

3 Tbsp of Avocado Oil

1 Tsp of Dried Parsley

2 Tsp of Garlic Powder

1 Tsp of Onion Powder

Add all ingredients and mix well. Put in the microwave for 30 secs and enjoy.
