Chicken Nachos

Nachos is one of my favorite kick it and chill foods. Nothing like a nice glass of wine and some gooey cheese on a chip. Here is my recipe on how to make this crowd favorite. 

Chicken Nachos What You Will Need:

4 Boneless Chicken Thighs

2 Tbsp of J.Delawcious Seasoning  

1 Tbsp of Olive Oil 

1 Prepared Pico Di Gallo 

1 Cup of  Prepared Queso or Homemade 

1 Can of  Black Beans

2 Chopped Green Onions 

1 Diced Small Onion 

1 Bag of Blue Corn Chips 

1 Bag of Corn Chips 

1/2 Cup of Sour Cream 

2 Tbsp of Milk 

1 Squeeze bottle

Prep:

In a small bowl add chicken and jdelawcious seasoning. Allow the meat to marinate for 20 minutes. 

Cook:

In a skillet on medium high heat, add chicken to hot pan. Sear on both sides for 4-5 minutes or an internal temp of 165F. Remove chicken from the pan and allow it to rest for 3minutes. After resting chopped into bite sizes pieces. Remove black beans from the can and rinse in mesh strainer.

Then sit aside. In a small bowl add sour cream and add milk. Mix until you get a thinner consistency. Add more milk by the tablespoon until desired consistency. Then use a funnel and pour into a squeeze bottle. Warm cheese sauce of your choice. 

Take a large bowl or plate and place an even layer of chips down, Then add chicken, cheese, queso, green onions, beans, pico di gallo and onions. If you like jalapenos feel free to add them here as well. Make another layer of chips and repeat until toppings are completed. 

Serve:

You can serve this with sour cream, guacamole, and salsa.
