Childhood Favorite’s Week: Pork Chops and Peppers

When I was a little girl, my mother would always make it happen when we didn’t have items that matched in our fridge to make a meal. Pork Chops and Peppers was born out of her genius level of creativity. I can honestly say that I grew up in a “Chopped” style kitchen.

My mom put these ingredients together one day and made a complete masterpiece. I have been eating Pork Chops and Peppers better know as Pork Chops & Red Sauce ever since. The meal is so important that I share it with all the people I love. Today, I am prepared to share it with you.

Pork Chops and Peppers

What you will Need:

2 Center Cut Pork Chops

1/2 Cup Chopped Peppers (Red and Yellow)

1/2 Cup Chopped Onion (Sweet Onion) 

1/2 Cup Sliced Mushrooms

1 Tsp of Minced Garlic

1/2 Cup Tomato sauce

1 Tbsp  Olive Oil

1 Tbsp of Flour 

1/2 Cup of Water 

1 Tbsp of J. Delawcious Seasoning 

1/8 Tsp of Salt or to taste 

1/8 Tsp of Pepper or to taste 

Prep:

Season both Pork Chops with J.Delawcious Seasoning. Then sit aside. 

Cook:

In a large skillet add olive oil on medium heat. Once the oil is heated, lay the pork chops in and brown them. This will take about 2-3 minutes each side. Remove the chops and sit aside. In the same skillet add the peppers and onions. Cook the onions and peppers for 2-3 minutes.

Next, add the garlic and cook for 30 seconds or until fragrant. Add the flour to the peppers and onions then stir. Stir the onions, peppers, and flour until the raw flour elements are no longer visible. 

Add the water a little at a time to the vegetable mixture and stir. Keep adding water in increments until completely incorporated. Pour tomato sauce into the mixture and continue to stir. Season with salt and pepper to taste. Re-add the pork chops and any accumulated juices then stir. Turn the heat down to low and let simmer for 10 minutes to cook the chops all the way through. 

Serve:

Serve this over rice and garnish with parsley (optional).
