Prosciutto Wrapped Chicken Breast

This simple and elegant meal is for any day of the week. My prosciutto wrapped chicken breast will transport you to flavor heaven with the most minimal ingredients. Here is the recipe for this cheesy and yummy roll-up. If you make this dish please #jdelawcious. 

Prosciutto Wrapped Chicken Breast

What you will need:

8 Slices of Prosciutto

4 Chicken Breast Butterflied and Pounded

1 bunch of Kale

1 Sliced Large Onion

1 Sliced Red Pepper

2 Cups of Shredded Vermont Cheddar Cheese

1 teaspoon of salt or to taste

1 teaspoon of pepper or to taste

1 Tablespoon of Fresh Thyme

1 Tablespoon olive oil

Prep/Cook

Preheat the oven to 350F

In a large skillet on medium high heat add olive oil, kale, sliced onions, and sliced peppers. Stir the vegetables and then add salt/pepper. When the kale has wilted, remove all vegetables from the skillet and place into a bowl to cool. Once cooled we can assemble the roll. Lay one piece of prosciutto the length of the halved pounded chicken breast. Place the chicken breast on top of the prosciutto.

Then layer a teaspoon of the kale mixture and a sprinkle of cheese.  Roll the chicken from the top and place in a castor skillet or baking sheet seam side down. Continue and repeat until all chicken is stuffed and wrapped.

Place the chicken in the preheated over for 15-18 minutes or until an internal temp of 165F. Remove from the oven and sprinkle some fresh thyme over for garnish and flavor.

Sides

This dish pairs perfectly with glazed carrots, mashed sweet potatoes, mashed russet potatoes, or rice.
