Sausage and Peppers

Sausage and Peppers is the easiest yet comforting dish to create. It is minimal ingredients with maximum flavor. Today I will give the recipe for a quick and easy meal for dinner or anytime of the day that you feel like treating yourself. Enough talking and let’s get down to this BEYOND easy recipe. 


What you will need:

Italian (Chicken, Turkey, or Pork) Sausage

1 Sliced Large Onion

1 Sliced Large Green Pepper

1 Pint of Sliced Baby Bella Mushrooms

1 Jar of Prepared Marinara Sauce or homemade

1 Cup of Shredded Mozzarella Cheese

1 Package of Artisan Sub Rolls

Salt and Pepper to taste

Cook:

In a large skillet on medium heat place the oil, green pepper, onions, salt and pepper to taste. Stir the pepper and onion mixture for about 4-5 minutes. Then add the mushrooms. Continue to cook until the mushrooms are tender, about 3 minutes. Remove the pepper/onion mixture from the pan and sit aside.

Fry:

Place the sausage in the same pan and cook for about 5 minutes each side. You want to cook until 150F internal. A meat thermometer will assist with the temp.

Bake:

In a 425 degree oven place sausages on a sheet pan or pyrex dish lightly sprayed with cooking oil. Cook the sausages in the over for 22-25 minutes. Check the temp of the sausage after 20 minutes for an internal temp of 150F. Cooking times depend on the range you are using.

After the sausages are done you can start to build your sub.

Assembly:

You can mix the sauce, peppers, sausages and warm through then top with cheese or you can do as I did in the tutorial down below. Make sure ingredients are layered in the sub roll and then placed under the broiler to melt the cheese. Sit under the broiler for about 2 minutes. Then remove and serve.

Serve:

This sandwich is good on it’s own or with a salad.
