Baked Potato with Steak & Peppers

First let me say, New Jersey has some of the best food EVER! I was thinking of home and was inspired to recreate on of my Jersey favorites. While I was working in Newark, I use to frequent this restaurant called Barbecue Hut which is now closed for baked potatoes. I know it is strange to hit a BBQ spot for potatoes but they these baked potatoes were FIRE! What made these potatoes so special was the toppings.

They would have steak & peppers, shrimp, broccoli & cheese, etc. The combos were endless. My favorite were chicken broccoli cheese and steak & peppers. Today I will show you how to recreate this classic and satisfying dish.

What you will need:

4 baking potatoes (Russet)
3 Tbsp of Avocado Oil or (Olive, Coconut, Canola, etc)
1 Sirloin Steak Season with  (Best with J. Delawcious Beef & Lamb) 
1/2 Sliced Sweet Onion
1.2 Sliced Green Pepper
1/8 tsp of Salt
1/8 tsp of Pepper
1/2 cup of Beef Gravy
2 Tablespoons of Sour Cream
1 Tbsp of Parsley

Prep:

Clean to rid potatoes of any dirt. Then dry them and stab them with a fork on each side. Then brush oil on all sides of the potato, salt them, and wrap in foil. Repeat until all potatoes are wrapped.

Slice the beef into strips and season with pepper sit aside. Then slice green peppers and onions.

In a small bowl add two heaping spoons of sour cream. Add milk and stir. Stir and the sour cream should thin out. Keep adding milk little at a time until desired thinness. Then add to a squirt bottle and refrigerate until ready for use.

Cook:

Pre-heat oven to 450F and place potatoes in for 45 minutes.

In a nonstick skillet on medium high heat add oil to pan. Then once th oil is heated salt the beef meat and add to the pan. Do not over crowd to endure browning. Cook meat to your desired doneness. Remove from the pan and sit aside.

In the same pan add onions and peppers. Add salt and pepper to taste. Sautee until onions are translucent. Re-add the steak/juices to the pan and mix with the vegetables. Add the gravy and warm through for 2-3 minutes.

Serve:

Cut potatoes half way down the middle and fluff the potato. Add any butter, salt, and pepper to the inside. Fluff and mix. Then top with steak mixture. With the squeeze bottle top with sour cream and sprinkle parsley (optional).
