No Bake Strawberry Cheesecake Tart

I love to make a no fuss dessert. What is better than making one you don’t even have to bake? Well I have the perfect no bake strawberry cheesecake tart ready for your eating pleasure. You will not believe how easy and delicious this recipe actually is.


This what you will need:
The Crust:

1 Package Butter Cookies
1 Stick of Melted Butter
1 Tbsp White Sugar
1 Tbsp Brown Sugar
Cooking Spray

The Filling:

8 oz Room Temp Cream Cheese
1/3 Cup of Sugar
1 Cup Sour Cream
2 tsp Vanilla Extract
8oz Prepared Thawed Whipped Cream
1 pound of  Fresh Sliced and Halved Strawberries
2 Tbsp of Strawberry Jam


Crust Directions:

Put the cookies in a blender and blitz until cookies are like dust. If you do not have a blender place them in a zip lock bag and beat with pin until smashed into a dust consistency.

Place the dusted cookies in a large bowl. Add white sugar, and brown sugar. Stir until well incorporated. Then add butter and mix until you get the consistency of wet sand.

Oil the tart pan with the cooking spray. Then pour the cookie mixture into the tart pan. Press the cookies down in the pan into an even layer. Once the cookies are evenly patted place the tart pan in the freezer to set up. This will take about 30 minutes.

The Filling:

In another large bowl add cream cheese. With a handle mixer whip until fluffy. Then add the sugar a little at a time while continuing to whip the cream cheese. Then add the sour cream and whip until smooth. With a spatula mix in the vanilla extract. Once mixed, then fold in the whipped cream until fully incorporated.

Assemble:

After 30 minutes the crust should be set-up. Pour the filling into the tart. Then decorate with the strawberries on top. It can be any design or simply places to make sure each slice has strawberries.

In the microwave for 30 secs warm strawberry jelly. Run it through a fine sieve to remove any solids. Discard the solids. Brush the syrup on top of the strawberries with a pastry brush.

Once shiny stick back in the freezer for another 2 hours to 4 hours. After 2 hours slice and enjoy.
