Roasted Potatoes

My roasted potatoes recipe is sinfully delawcious! It is a simple treat that will hugs your stomach and your heart. This one pot meal will impress any potato lover.

What you will need:

4 medium size potatoes diced  

1 Fresh Sprig of Rosemary or 2 Tsp of Dried Rosemary

2 Tablespoons of J. Delawcious Seasoning

1 Sliced Yellow Sweet Onion

1 Tablespoon of Olive Oil

1 Tablespoon Chopped Fresh Parsley or bacon (Optional)

Prep:

Preheat the oven to 425F

Rinse the potatoes to remove any dirt. Then pat dry. Once dry, cut the potatoes into like sized pieces. Place the cut potatoes into a large bowl.  Then slice the onion and place them into the bowl with the potatoes. Add the olive oil then massage to coat the potatoes and onions evenly.

After you’ve coated the mixture with oil, add J. Delawcious Vegetable Seasoning and rosemary. Massage the seasoning onto the onions and potatoes.  Sit aside for 15-30 minutes to let the seasoning marinate on the vegetables.

Cook:

Spread the potato mixture in an even layer on a baking sheet or a cast iron skillet. If you decide to use a cast iron skillet,  please warm it on the stove first to ensure even cooking.

Then roast the potatoes for 30 minutes. Check the doneness with a fork to make sure they are tender.

Once they are tender, switch on the broiler and brown them for a crispy texture on top. I would leave it under a high broiler for 2 minutes intervals. Keep going every 2 minutes until desired brownness/crispness.

Serve:

Sprinkle the chopped parsley on top and enjoy.
