Tomato Herb Grilled Cheese Sandwich

I love a good grilled cheese sandwich! It is so comforting and hugs you during these winter months. This is a cool option for my veggie loving friends. This taste delicious without meat, however I added bacon because I love the smokey flavor it adds to the cheesy sandwich. Let me show you how to do it! 

What You Will Need:

2 pieces of Asiago Bread 

2 Tbsp of Room Temp Butter 

Handful of Arugula 

2 pieces of Sliced Tomatoes 

2 Pieces of Halved Cheddar Cheese 

1Tsp of Fresh Thyme 

1/8 tsp of Salt

1/8 tsp of Pepper 

1/8 tsp of Oregano

Optional 

Applewood Smoked Bacon

Prep/Cook:

Butter one side of the Asiago bread and then sit aside. Heat the skillet to low and place both pieces of bread butter side down. Then add sliced tomato, cheese, onions, and herbs. Here you would add bacon if you so chose. Allow the bread to cook until you see that the edges are golden brown. 

Once golden brown place the piece of bread on top to close the sandwich. Move the sandwich to the middle of the skillet and top it with a tight fitted lid. Remove the heat and allow it to cook for another 3 minutes to melt the cheese completely.

Serve:

Top the sandwich with the arugula and cut in half. This sandwich is great with any soup or on it’s own.
